I'm sure I've seen this before, but can't find the info. Should I stick with 6.2 injectors, or use 6.5's? Engine is stock with exception of dual exhaust. A little extra performance would be ok.

How did you do your exhaust system, what mufflers?
Most cases I'd probably stick with a 6.2L injector, if you've upgraded the air supply and especially the exhaust, then you might get away with a Turbo 6.5 injector.
Best bet, 6.2L injector, you'll get the peformance back that the engine is supposed to see, but isn't due to worn injectors.

John,
2.5" pipes from the manifolds back. "Turbo" mufflers. No H pipe. Intake system is completely stock, including the silencer.

You've got a better exhaust system, you could try the turbo injectors. I did with pretty good results, but that was before I plugged up my exhaust system by installing stock mufflers...

What characteristics do the 6.5 injectors have? I'm assuming that they can supply a bit more fuel. Would/could the fuel be regulated by the IP, or not? I don't really have the money to experiment with injectors.

They have a higher pop pressure, and have a larger amount of fuel per spray. I really just left the injection pump alone, didn't change the delivery and felt a slight improvement in power.
The guaranteed way to get this right would be the correct body 6.2L injectors for the engine (long or short body depending on year/application).
