I have a good solid engine that sucked a broken stud from air cleaner and damaged #2. Can I hone and oversize just one piston or bore and sleeve one hole?

Bummer, this hits close to home.
The most likely to fix option is to bore the hole larger with an oversized piston.
You could sleeve just one hole, that is possible and go back with standard in an already standard engine.
I don't think I'd recommend one larger piston in just one hole compared to the rest, it'd be out of balance due to the heavier piston in one hole for one.

Sleeve the hole to the size of the new piston (oversize) if your replacing all of the pistons or sleeve it to standard if that is what you have. I have done it both ways and never had an issue.
Just sleeved one with a section of the bore missing because of hydraulic lock. First one I have done like that, machinist says it will be good as new. just like a wet sleeve only different. We will see. The block was new and had a coolant leak at the head gasket which bleed coolant into the cylinder.
Engine exploded when it started, bottom end is still good.
