Anyone know where to find the coolant glow plug system switch (the one in the head with two leads coming out of it)? Can't find it online yet, maybe I'm not looking under the right term or in the right places...

A lot of people just bypass it and let the plugs glow all the time.

The 82 had the early Glow controler that looked like a slender toad stool.
The later ones (85 on I think) had the later style.
The switch you are speaking of was called the glow plug inhibit switch and did not come into being untill the later units and then it was discontinued after a couple years or so as it was a source of trouble in starting some engines when only slightly warm.
The inhibit switch needed to be cold to close.
The other switch on the 82 will be the Cold case advance switch. It is also a 2 prong switch and controls the cold advance and the fast idle.

Cold case advance? I hadn't heard of that one, I would suppose that would be it, on my engine, someone had neglected to change the coolant to the point that the old switch was corroded through, anyone know if these can be found on standard online auto parts stores?

That should be the one that is in the link that I posted.
Your truck wont have the inhibit switch but the CCA switch is needed.
Most good parts stores will be able to supply that part. Depends on if thre parts person is worth a tap.
The GM store is a better bet.
Those were used for many years.
The inhibit switch was boondoggle and was dropped around 87
