On a 7-pin hitch, which wire performs which function? Or, do you know where I can find this info. Need to splice into certain ones.

There is a link, www.marksrv.com/wiring.htm, that gives an excellent diagram. On the vehicle, starting at the notch at 6 o'clock position, going clockwise, (at 7 o'clock) blue wire, brakes; (@ 9 o'clock) brown wire, right turn / stop; (@ 11) black wire, battery charge; (@1) green, tail / running; (@3)red wire, left turn/ stop; (@5) white wire, common ground, center position yellow auxiliary / back up.
This is the setup for "most" 7 pin hook ups.

On mine, there is a tag on the wire harness just as it enters the plug which describes each wire.

Mine has it printed on the cover that snaps down over the conector on the hitch on the truck in addition to the tag mentioned above.
