I have noticed that when exiting an off ramp the oil pressure drops some, consistent with the dropping rpms. However, at the end of the off ramp when I step on the brakes the oil pressure guage drops dramatically. Any thoughts on this type of behavior? Things to check or general expanations?

The oil pressure will drop when you step on the brake, because you'll notice that the RPM's will drop back down to 650 or where it normally idles. The reason for this is the Torque convertor fully unlocks (not the 2nd stage, just first stage), you'll also notice that the RPMs will stay around 1k-1.5k RPM before and after pressing the brake.
How low of oil pressure?
What pressure does it run hot when at idle sitting?
What pressure do you see going down the highway?

At highway speeds the guage indicates ~40 psi. Hot and idling with my foot on the brake ~15 psi and hot and idling without my foot on the brake it shows ~20 psi. But IMO most factorry guages are junk. I noticed that there is a plugged port on the oil filter boss and I'm guessing I could plumb a mechanical guage in there.
