De-installed Juice - can't dealer still tell?

I thought that the new computers in our trucks allow service techs to pull historical performance data from the engine. If this is the case, wouldn't the tech be able to tell that you've had some sort of performance-enhancing hardware on the engine, even though the equipment isn't presently installed? I do know that they can retrieve old SES codes. Anybody know what data they can actually pull out of the scan tools that they use?
