Is there a reason why these engines run so hot ? Mine almost always runs @ one line befor 210, 200 I assume ! Is this where they all run ? I have built many small block and big block Chevy motors and they were always happiest between 180 and 185 in terms of horse power and longevity. Maybe I'm just old school ? I would hate to be towing something and already have the temp @ 200 degrees from the get go !

Mine runs that hot also.Have towed the fifthwheel camper a few times and saw no change in temp.

Mine runs the same. 190-200 degrees, whether I'm
unloaded or towing up a 6% grade on a 100 degree
day.

Gauge inaccuracy is the biggest problem. If one were to check the actual operating temp, it's around 190-195 or so. I have seen a 10-15 degree difference in indicated vs. actual operating temp on the Tech II scan tool on my truck. OEM gauges have never been very accurate.
The Dmax comes equipped with two thermostats, one is 180 degrees and the other is 185 degrees IIRC. Someone may remember the exact thermostat ratings...

diesels like heat. run them hot and they work better.. too cold and they are innefficent.
The temperature never changes. Towing over the northern California mountains 110 degrees with the AC running, the transmission in T/H both the tranny and engine between 185 and 190.However if I did'nt use T/H the transmission temp would go over 200. I have the deep pan and Transynd in the tranny. The engine has never gone over 190.I intend to get a billet grill and elliminate the GMC insignia which covers the transmission cooler almost entirely.
